Method
Preparation
Preheat the oven to 325°F (160°C).
In a bowl, mix graham cracker crumbs with melted butter and press into the bottom of mini cheesecake liners.
In a mixing bowl, beat together cream cheese, sugar, and vanilla until smooth.
Add eggs one at a time, mixing well after each addition.
Pour the cheesecake mixture over the crust in liners.
Apple & Oat Layering
In another bowl, toss diced apples with cinnamon and brown sugar.
In a separate bowl, combine oats and flour.
Layer apple mixture on top of cheesecake and sprinkle with oat mixture.
Baking
Bake for 20-25 minutes until the cheesecake is set.
Allow to cool before serving.
Notes
Serve chilled or at room temperature with whipped cream on top.
