Ingredients

Crust
  • 2 cups graham cracker crumbs For the crust
  • 1/2 cup unsalted butter, melted Melted, for binding the crust
Cheesecake Filling
  • 2 cups cream cheese, softened Make sure it's softened for easy mixing
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs Add eggs one at a time
Apple Topping
  • 2 cups apples, peeled and diced Use a variety of apples for different flavors
  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar
Oat Mixture
  • 1 cup oats
  • 1/2 cup flour

Method

Preparation
  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs with melted butter and press into the bottom of mini cheesecake liners.
  3. In a mixing bowl, beat together cream cheese, sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pour the cheesecake mixture over the crust in liners.
Apple & Oat Layering
  1. In another bowl, toss diced apples with cinnamon and brown sugar.
  2. In a separate bowl, combine oats and flour.
  3. Layer apple mixture on top of cheesecake and sprinkle with oat mixture.
Baking
  1. Bake for 20-25 minutes until the cheesecake is set.
  2. Allow to cool before serving.
