Ingredients

Main Ingredients
  • ½ cup unsalted butter
  • 1 ½ cup heavy cream Can be substituted with half-and-half for a lighter version.
  • 2 Tablespoons Cajun seasoning Can use homemade or store bought.
  • ½ teaspoon kosher salt Omit if your seasoning blend contains salt.
  • cup freshly grated parmesan cheese Make sure it is freshly grated for best results.
  • 1 whole lemon Use only the zest.
  • 3 Tablespoons smoked paprika
  • 1 Tablespoon onion powder
  • 1 Tablespoon garlic powder
  • 2 teaspoons kosher salt
  • 1 teaspoon ground white pepper
  • 1 teaspoon ground mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon cayenne pepper
  • ½ teaspoon dried basil

Method

Preparation
  1. In a large skillet, melt the butter over low heat until it becomes frothy with tiny white bubbles on top.
  2. Stir in the heavy cream and Cajun seasoning, adding salt only if necessary. Bring the mixture to a gentle simmer and cook on low for 5 to 6 minutes, allowing the flavors to meld.
  3. Remove the pan from the heat and add the lemon zest. Gradually incorporate the parmesan cheese, stirring until it is completely melted and the sauce is smooth. Adjust salt to taste.
  4. Add your choice of pasta to the skillet, tossing to coat the noodles in the rich sauce or serve as desired.

Notes

For added protein, mix in cooked shrimp, chicken, or sausage. You can also incorporate sautéed bell peppers or onions for extra texture and flavor. Store any leftover sauce in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm on the stovetop over low heat, adding a splash of cream or broth to restore creaminess.
