Heat olive oil in a skillet over medium heat.
Add sliced chicken to the skillet and cook until browned, about 5-7 minutes.
Incorporate the sliced onion and bell pepper into the skillet, cooking until softened, approximately 5 minutes.
Season the mixture by sprinkling garlic powder, salt, and pepper over the chicken and vegetables, mixing well to combine.
Top with provolone cheese, placing a slice on top of the chicken mixture, then cover to allow the cheese to melt.
