Method
Preparation
In a saucepan, combine water and butter over medium heat until the butter melts.
Stir in the flour, salt, and vanilla extract until the mixture comes together into a smooth dough.
Remove the pan from heat and beat in the eggs, one at a time, until the mixture is glossy and smooth.
Cooking
Heat oil in a deep pan to about 350°F (175°C).
Transfer the dough into a piping bag fitted with a large star tip. Carefully pipe small bites into the hot oil, being cautious of splashes.
Fry until they turn golden brown, about 2-3 minutes.
In a separate bowl, mix together the sugar and ground cinnamon for coating.
Once fried, remove churro bites and drain the excess oil. Immediately roll them in the cinnamon sugar mixture.
Serve warm with a generous filling of Nutella in the center.
Notes
Store any leftovers in an airtight container for up to 2 days. Reheat in a warm oven for a few minutes to regain their crispy texture.
