  • 2 large Eggs
  • 1 cup Parmesan cheese, grated
  • 4 oz Pancetta, diced

Method

Preparation
  1. Bring a large pot of salted water to a boil and cook the cheese-stuffed tortellini according to the package instructions. Once cooked, drain and set aside.
Cooking
  1. In a large skillet, heat olive oil over medium heat. Add the pancetta and cook until it’s crispy and golden brown, about 5-7 minutes.
  2. In a bowl, whisk together the eggs and grated parmesan cheese until well combined. Season with a generous amount of black pepper for added flavor.
  3. Add the cooked tortellini to the skillet with the crispy pancetta. Remove from heat and quickly pour in the egg and cheese mixture, tossing everything together until the tortellini is evenly coated and creamy.
  4. Serve immediately, garnished with fresh parsley if desired for a pop of color.
