Preparation
  1. Place the beef roast in the slow cooker and generously season with salt and pepper.

Cooking
  1. Cover and cook on low for 480 minutes (8 hours) or high for 240 minutes (4 hours), until the beef is tender and shreds easily with a fork.
  2. Once cooked, use two forks to shred the beef straight in the slow cooker.
Serving
  1. Serve the shredded beef piled high on hoagie rolls, topped with slices of cheese that will melt with the heat of the beef.
  2. Strain the cooking liquid into small bowls to serve as au jus for dipping.
