For the cake

  • 2 large eggs at room temperature
  • 1/2 cup vegetable oil

For the mousse
  • 1 cup heavy cream whipped until soft peaks form
  • 1 cup semi-sweet chocolate chips melted
  • 2 tablespoons powdered sugar

Method

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large bowl, mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, vegetable oil, vanilla extract, and water to the dry ingredients. Mix until well combined.
  4. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
  5. Let the cake cool completely.
Mousse Preparation
  1. Melt the chocolate chips in a double boiler or microwave.
  2. In a separate bowl, whip the heavy cream until soft peaks form.
  3. Gently fold the melted chocolate into the whipped cream.
  4. Spread the chocolate mousse over the cooled cake.
  5. Chill in the refrigerator for at least 1 hour before serving.
