  • 1 cup French fried onions
  • 3 tablespoons butter, melted
  • Salt and pepper to taste

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Boil the diced potatoes in salted water until they are tender, approximately 10-15 minutes. Drain and allow to cool.
  3. In a large mixing bowl, combine the sour cream, shredded cheddar cheese, and cream of chicken soup. Stir until the mixture is smooth and well blended.
  4. Add the cooked potatoes and half of the French fried onions to the creamy mixture. Gently fold everything together until well incorporated.
  5. Pour the potato mixture into a greased baking dish, spreading it out evenly.
  6. Top the casserole with the remaining French fried onions, then drizzle the melted butter over the top.
  7. Bake in the preheated oven for about 30-35 minutes or until the top is golden brown and bubbly.
