2cupstortellini (your choice of cheese or spinach-filled)
1cupcooked chicken, shredded (rotisserie chicken works wonderfully here)
2cupsbroccoli florets (fresh or frozen)
2tablespoonsolive oil
3clovesgarlic, mincedbecause garlic makes everything better
1/2cupgrated Parmesan cheese
Salt and pepper to taste
Red pepper flakes (optional)for a little kick
Method
Cooking Steps
Start by bringing a pot of salted water to a boil. Add the tortellini and cook according to the package instructions. Once they float to the top, they are almost done! Drain the tortellini and set it aside.
In a large skillet, heat the olive oil over medium heat.
Toss in the minced garlic and sauté for about 1-2 minutes until it’s fragrant. Be careful not to let it burn.
Stir in the broccoli florets and cook for 4-5 minutes until they are tender but still have a nice crunch.
Add the cooked chicken and tortellini into the skillet. Mix it all together.
Sprinkle the grated Parmesan cheese over the top and give it a good stir.
Season with salt, pepper, and optional red pepper flakes to taste.
Remove from heat and serve it warm, garnished with a little extra Parmesan if desired.
