Ingredients

  • 2 cups tortellini (your choice of cheese or spinach-filled)
  • 1 cup cooked chicken, shredded (rotisserie chicken works wonderfully here)
  • 2 cups broccoli florets (fresh or frozen)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced because garlic makes everything better
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional) for a little kick

Method

Cooking Steps
  1. Start by bringing a pot of salted water to a boil. Add the tortellini and cook according to the package instructions. Once they float to the top, they are almost done! Drain the tortellini and set it aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Toss in the minced garlic and sauté for about 1-2 minutes until it’s fragrant. Be careful not to let it burn.
  4. Stir in the broccoli florets and cook for 4-5 minutes until they are tender but still have a nice crunch.
  5. Add the cooked chicken and tortellini into the skillet. Mix it all together.
  6. Sprinkle the grated Parmesan cheese over the top and give it a good stir.
  7. Season with salt, pepper, and optional red pepper flakes to taste.
  8. Remove from heat and serve it warm, garnished with a little extra Parmesan if desired.

Notes

Can substitute broccoli with asparagus, peas, or spinach. Add a splash of lemon juice for extra flavor.
