Method

Cooking the Pasta
  1. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving about 1/4 cup of pasta water.
Preparing the Sauce
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and red pepper flakes (if using); sauté for about 1–2 minutes until fragrant and lightly golden, taking care not to burn the garlic.
  3. Add the cooked pasta to the skillet, tossing gently with tongs to combine with the garlic oil. If the pasta seems dry, add a splash of the reserved pasta water.
  4. Stir in the grated Parmesan cheese and mix until the noodles are well coated and creamy.
  5. Season with salt and pepper to taste, adjusting the cheese or red pepper flakes as desired.
Serving
  1. Garnish with chopped fresh parsley and serve warm.

Notes

Freezing isn't recommended — store the cooked pasta and sauce components separately in the fridge for up to 3 days. Use freshly grated Parmesan for best results.
