Method

Preparation
  1. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and ground nutmeg until well combined.
  2. In a separate bowl, mix the buttermilk, eggs, vanilla extract, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix; it's okay if there are a few lumps.
  4. Cover the dough with plastic wrap and let it rest for about 30 minutes.
Cooking
  1. While the dough rests, heat the vegetable oil in a deep pot over medium heat until it reaches 350°F (175°C).
  2. Using a spoon or a small ice cream scoop, drop heaping tablespoons of the dough into the hot oil, being careful not to overcrowd the pot.
  3. Fry until golden brown, about 2-3 minutes on each side. Use a slotted spoon to remove them when they are done.
  4. Drain the beignets on paper towels and dust generously with powdered sugar before serving.
