Ingredients

For the crust
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
For the filling

Method

Preparation
  1. Preheat the oven to 350°F (175°C) and grease an 8x8 inch baking dish.
  2. In a mixing bowl, combine flour, granulated sugar, butter, baking powder, and salt until the mixture is crumbly.
  3. Press half of this crumbly mixture into the bottom of the prepared dish to form the crust.
Making the filling
  1. In another bowl, whisk together lemon juice, lemon zest, and eggs until everything is well combined.
  2. Pour the lemon mixture over the crust you just made.
  3. Sprinkle the remaining crumb mixture on top of the lemon layer.
Baking
  1. Bake for 25-30 minutes, or until the edges are golden brown.
  2. Let the bars cool completely, then dust with powdered sugar before cutting them into squares.
