Method
Preparation of the Crust
Preheat the oven to 325°F (160°C).
Combine the graham cracker crumbs, sugar, and melted butter in a bowl.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake the crust for 10 minutes and let it cool.
Making the Cheesecake Filling
In a large bowl, beat together the softened cream cheese and sugar.
Add eggs one at a time, mixing well after each.
Stir in the lemon juice, lime juice, and vanilla extract.
Pour the filling over the cooled crust.
Baking the Cheesecake
Bake at 325°F (160°C) for 50-60 minutes or until the center is slightly jiggly.
Turn off the oven and let the cheesecake cool inside for an hour.
Refrigerate for at least 4 hours before serving.
Adding the Toppings
Before serving, top with cherry pie filling and chopped pistachios.
Notes
Serve chilled for best flavor. Use a hot knife for clean slices and consider garnishing with whipped cream, extra cherries, or citrus zest for an elegant touch.
