Preparation
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the seasonal vegetables, cooked quinoa or rice, olive oil, garlic powder, onion powder, and dried herbs. Season with salt and pepper to taste.
Transfer the mixture to a greased baking dish, spreading it evenly.
If using cheese, sprinkle it generously over the top.
Cover the dish with aluminum foil and bake for 30 minutes.
Remove the foil and bake for an additional 10-15 minutes until the cheese is golden and bubbly, and the vegetables are tender.
Remove from the oven, garnish with fresh herbs, and serve warm.
