These S'mores Cookie Bars combine the classic campfire flavors of s'mores into an easy-to-make dessert that's perfect for gatherings or a sweet weekend treat.

Ingredients

For the Cookie Base
  • 1 cup unsalted butter, softened Make sure your butter is at room temperature for easier mixing.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
For the Filling
  • 1 cup chocolate bars, chopped Use a mix of milk and dark chocolate for a richer flavor.
  • 1 cup marshmallow creme Can substitute with mini marshmallows or homemade marshmallow fluff.
  • 1 cup mini marshmallows Feel free to add more to the layers if you love marshmallows.

Method

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In another bowl, combine the flour, baking soda, and salt. Gradually add to the creamed mixture until just blended.
  5. Press half of the cookie dough into the bottom of the prepared baking dish.
  6. Spread marshmallow creme over the dough in an even layer, then arrange chopped chocolate bars on top.
  7. Sprinkle mini marshmallows over the chocolate.
  8. Crumble the remaining cookie dough over the top.
Baking
  1. Bake for 25-30 minutes, or until golden brown.
  2. Allow to cool before cutting into bars.

Notes

Serve bars warm or at room temperature. They can be cut into squares or rectangles for easy serving. Store leftover bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
