Ingredients

Breakfast Ingredients
  • 1 block Egg tofu or silken tofu
  • 1 cup Zucchini, diced
  • 4 cups Chicken or vegetable stock
  • 1 tbsp Bouillon for seasoning
Lunch Ingredients
  • 1 block Firm tofu, pressed and pan-fried
  • 1 cup Fresh lettuce For wraps
  • 1 bunch Cilantro
  • 2 number Egg ribbons
  • 8 sheets Rice paper wrappers
  • 1 number Avocado
Dinner Ingredients
  • 1 block Firm tofu, cubed
  • 2 number Ripe tomatoes
  • 1 tbsp Ketchup For sauce
  • 1 tbsp Fish sauce
  • 1 tbsp Sugar
  • 2 cups White rice For serving

Method

Breakfast Preparation
  1. Simmer the stock and season with bouillon.
  2. Add diced tofu and zucchini.
  3. Simmer until zucchini is tender.
  4. Serve warm with optional sesame oil or green onions.
Lunch Preparation
  1. Prepare all fillings ahead of time.
  2. Soften rice paper, layer fillings, and roll.
  3. Whisk together a dipping sauce with fish sauce, sugar, vinegar, and chili.
  4. Serve immediately.
Dinner Preparation
  1. Cook tomatoes into a sauce with seasoning.
  2. Add tofu and simmer.
  3. Serve over freshly steamed rice.
