Method

Preparation
  1. Gather and prep your ingredients: slice the beef into thin strips and chop the bell peppers and onion. Lay out the low-carb tortillas and cheese slices for easy assembly.
  2. Heat 2 tbsp extra virgin olive oil in a skillet over medium heat. Add the chopped onion and bell peppers and sauté until softened, about 5–7 minutes. Season lightly with salt and pepper.
  3. Increase the heat to medium-high, add the sliced beef to the skillet, season with salt and pepper, and cook until the meat is browned, about 3–5 minutes. Stir to combine with the softened peppers and onions.
  4. Reduce heat to low; place provolone slices over the beef mixture to melt completely. Cover briefly if needed to encourage even melting.
Assembly
  1. Spoon an even portion of the beef-cheese mixture onto each tortilla and roll tightly, folding the sides in if preferred for a secure roll.
  2. Return roll-ups seam-side down to the skillet over medium heat; cook until golden brown on all sides, about 3–4 minutes total, turning gently so each side gets color.
  3. Remove from heat, let rest a minute, then slice in half if desired and serve warm.

Notes
